When I found out that I was going to have 20+ for dinner, I decided that 2 turkeys were in order. Then, by effect of a losing wager, I added one more to the list. So I decided to use my lamb roaster and throw 3 turkeys on the spit. I still brined them and rubbed them with butter (I even injected a little butter for good measure). It took about 6 hours and a little patient fire management, but in the end it was delicious. Juicy, moist, and just a hint of smoke flavor. What a fun day!
