It’s the Sunday before Thanksgiving and it a good relaxing day to do some things ahead of time. Soups and sauces are an obvious target. But today I made some empanada dough. I am trying a new Thanksgiving side dish, butternut squash and spinach empanadas. Getting stuff done ahead of time is such a good idea. It takes the holiday and makes it much more relaxing. Even if all you do is sit down and jot down a rough timeline/ to do list for shopping and making stuff ahead of time. Ten minutes of planning today can take hours of stress out of preparing the meal. And today, the family gets some chicken empanadas just to try them out with some leftovers. Nothing like killing two birds with one stone.
