I know. I’ll bet you’re thinking about fresh Florida oranges. Wrong! I am talking about carrot soup. Yes, carrot soup. It may sound a bit on the edge, but trust me when I tell you it is delicious. And it is also super easy. All you do is boil some peeled and chopped carrots in some rich chicken broth (or if you don’t have rich broth, take regular broth and reduce it by 30-50%) until they are very soft. Then use a slotted spoon to lift the drained carrots into a food processor fitted with a blade. Add a little of the broth into the processor to help them attain a smooth texture, and process for a few minutes. Go ahead and let it run a while so it gets a velvety texture. Put the pureed mixture into a pot and add enough of the original stock to get the thickness you prefer. If you then add just a little cream (optional), it gives it a beautiful rich mouth feel. Season with salt and fresh ground pepper to taste, and that is it. ‘Souper’ simple, and ‘Souper’ delicious!
