Preparation Time: 30 minutes
1 pound ground chicken or turkey
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
1 teaspoon salt
1 tablespoon Frank’s RedHot Sauce, or your favorite hot sauce
1 tablespoon olive oil
1 cup ricotta cheese
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic clove, finely chopped
1 tablespoon fresh mint, chopped
1 whole cucumber peeled, seeded and cut into 1/2-inch cubes
1 tablespoon white wine vinegar
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 whole iceberg lettuce leaves
1 medium tomato, diced
1/2 cup cucumber peeled, seeded and cut into 1/4-inch cubes
1. In a medium bowl, mix together chicken, salt, pepper, garlic powder, onion powder and hot sauce. Roll into small sausage shapes.
2. Preheat a grill pan over medium heat. Add oil and heat for 1 minute. Add sausages and brown on all sides until they are cooked through.
3. In a blender, place ricotta, sour cream, mayonnaise, cucumber, mint, white wine vinegar, sugar and garlic. Run blender until sauce is smooth and thick.
4. Place sausages on lettuce leaf and top with sauce, tomatoes and cucumbers.
