Preparation Time: 20 minutes
1 tablespoon olive oil
1 1/2 pounds Halibut fillet, cut into 4 thick portions
1 tablespoon salt
1 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1 teaspoon masala
1 teaspoon paprika
1 tablespoon brown sugar
1. Brush fish fillets with olive oil.
2. Take the rest of the ingredients and mix them together in a small bowl until blended well.
3. Sprinkle each fish aggressively with spice mixture and rub into flesh of fish (if you have extra spice mixture save for a future use).
4. Preheat grill or grill pan to medium high heat. Place fish on grill with the side down that is going to be up on the plate first (the appearance side). Let grill until nicely seared, about five minutes. Turn the fish over and cook the other side until it is also nicely seared. Remove from direct heat and finish until fish is cooked though and flaky. Halibut dries out easily, so don’t overcook it. It takes 10 minutes of cooking for each inch of thickness of the fillet.
