Rosemary Roasted Fingerlings

1 pound Rainbow fingerling potatoes, cut in half lengthwise
2 tablespoons rosemary, finely chopped
1 clove garlic, finely minced
2 tablespoons olive oil
1 tablespoon coarse sea salt
1/2 teaspoon fresh ground black pepper


1. Toss together all the ingredients in a medium bowl. Pour onto a baking sheet lined with parchment paper or non-stick spray.
2. Roast on 400 degrees until potatoes are nicely browned and potatoes are soft to the center, about 30-40 minutes.
