Pepper Grilled Chicken and Mango Tacos

1 pound boneless chicken breast halves
1 teaspoon olive oil
1 tablespoon fresh cracked black pepper
1 teaspoon salt
4 flour tortilla shells, either deep fried or baked
1 ripe mango, peeled and sliced into long strips
8 snow pea pods, cut into long thin strips
1/2 cup tomatoes, chopped into small pieces
salsa and guacamole for condiments
salt and fresh ground pepper to taste


1. Preheat grill or grill pan to medium high heat. Brush chicken with olive oil. Season with salt and cracked pepper and rub pepper into chicken.
2. Grill chicken until golden brown and cooked through (firm to the touch), about 10 minutes. Set aside and let rest for 5 minutes.
3. Slice chicken on a bias and stack in tortilla shells.
4. Drizzle a little olive oil on the mango, pea pods, and tomatoes and season lightly with salt and fresh ground black pepper. Top chicken with mango, pea pods, and tomatoes. Serve with salsa and guacamole.
