For Meatless Monday (“One day a week, cut out meat.), I’d like to share with you my recipe for Pasta Primavera. The featured ingredients in this colorful and nutritious dish are of course the vegetables — mushrooms, broccoli, red onion, red bell pepper, sweet pea pods, and zucchini. Not only is it healthy for you to eat, but fun to make. It’s among the numerous dishes that are ideal to prepare with your kids, because it’s super-easy to whip up and it also shows kids how veggies can indeed be the tastiest food item on the menu.
