Spring is here, and for many of us that means a desire to eat meals that are lighter and healthier, and with as few ingredients as possible. Well I have a recipe for you that meets all of those requirements, a fresh, peppery Salmon and Avocado Salad. Salmon is high in protein and heart-healthy omega-3 fatty acids, while avocados pack more potassium than bananas and are known for its anti-inflammatory benefits. And the spicy marinade of rice wine vinegar, olive oil, salt, pepper, cilantro and red pepper flakes really brings out the cool flavors in the salmon, cucumbers, and avocado.
