Make sure you start with cold water. As soon as it comes to a boil, immediately turn it down to a low simmer. Don’t stir it ever! Skim the scum off the top as it forms, and after 2 hours, ladle it through a cheese cloth lined fine sieve. To remove the fat it is best to refrigerate it and let it harden. Then just peel it off.
