Preparation Time: 45 minutes
1 pound Italian sausage, bulk
1/2 cup ricotta cheese
1 cup Mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 teaspoon fresh thyme, finely chopped
1/2 teaspoon fresh oregano, finely chopped
1 tablespoon fresh basil, finely chopped
1 leaf fresh sage, finely chopped
1/2 teaspoon fresh tarragon, finely chopped
[You can substitute Italian seasoning if you wish for fresh herbs]
1 whole egg, beaten
8 medium tomatoes, cored and inner pulp removed
1 tablespoon olive oil
1/4 teaspoon salt
1. Preheat oven to 350 degrees.
2. In a small frying pan brown the sausage over medium heat until cooked through. Break sausage up into small chunks with a spatula. Drain grease and let cool.
3. Place sausage, all three cheeses, fresh herbs and eggs in a large mixing bowl and stir until thoroughly incorporated.
4. Brush outside of tomatoes with olive oil and sprinkle on the salt. Stuff each tomato with the sausage and cheese filling. Place on a foil lined baking pan and bake until top of sausage is nicely browned and tomatoes have softened, about 30 minutes.
