Preparation Time: 2 Hours
2 pounds ground beef
2 tablespoons salt
2 teaspoons black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground sumac (or paprika)
1 teaspoon garlic powder
1 can (11 ounces) chick peas, drained
1/4 cup Tahini (ground sesame seeds)
1 tablespoon fresh lemon juice
1/2 teaspoon garlic , peeled
2 tablespoons olive oil
2 tablespoons water
salt and pepper
1. In a medium bowl, mix thoroughly together beef, salt, pepper, cumin, coriander, sumak and garlic powder. Form meat into balls about 1 to 1 1/2 inch in diameter.
2. Preheat a large frying pan to medium high heat. Spray pan with non-stick spray. Add meat balls and cook until brown on all sides. Reduce heat to medium and cook for another 3-5 minutes or until they are firm to the touch.
3. In a large food processor with a blade place chick peas, Tahini, lemon juice and garlic. Process until finely chopped. Start adding the oil through the feed tube slowly. Then add water through the feed tube. Remove the top of the processor and check for consistency. If not smooth enough, add a little more water and process again until you get the desired consistency. Season with salt and pepper to taste.
