Huevos Rancheros

1 can (11 ounces) black beans
1/4 cup chicken stock or broth
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon chili powder
6 ounces tortilla chips
1/2 cup Meunster cheese, shredded
4 whole eggs, poached or fried
1/2 cup salsa of your choice
1/4 cup sour cream

Preparation

1. Place the black beans in a small pan along with chicken broth and spices. Bring to a simmer and cook for 10 minutes. Add a little water if necessary.
2. Stack a quarter of the chips on a plate. Top with beans and sprinkle on a light coating of cheese.
3. Place the egg in the middle of the plate and top with salsa and sour cream.
