Tacos are so simple to make and so delicious. To prepare a truly authentic taco, however, you’ll want to start with some real Mexican chorizo. Fortunately, many large grocery stores are starting to carry this product, but if you have a Mexican market nearby, that’s the best place to find the real thing.
Render the chorizo over medium high heat, until it starts to crisp up and get a little crunchy (be patient). I like to use flour tortillas in this instance, but high quality corn tortillas are more traditional. The only place to find good quality corn tortillas is also at a Mexican market. If you can’t find them at your local grocer, then pick a fresh looking flour tortilla.
Traditional tacos are topped with diced Spanish onions and chopped cilantro. Then add the salsa of your choice. And don’t be afraid to break out the margaritas!
