Preparation Time: 1 Hour
1 whole roasting chicken, cut into 10 pieces
2 tablespoons olive oil
2 tablespoons Dijon mustard
1/2 cup honey
1 tablespoon seasoned rice wine vinegar
salt and pepper
1. Brush chicken with olive oil and season with salt and pepper.
2. Preheat oven to 500 degrees. Place chicken in oven for 35 minutes and roast until golden brown crispy skin has been achieved.
3. In a small bowl mix mustard, honey, and seasoned rice wine vinegar.
4. Remove pan from oven and brush each piece heavily with honey mustard mixture. Bake 3‐5 minutes or until coating is brown. Remove from oven and baste again. Repeat basting 3 times waiting each time for layer to brown.
