Grilled Tilapia Gyros

6 whole Tilapia fillets
1 teaspoon extra virgin olive oil
1 clove garlic
salt and pepper

4 pitas
1 tablespoon olive oil
1 whole tomato, cut into thin wedges
3/4 cup red onion, cut into very thin strips
1/4 cup cilantro leaves

Tzatziki Sauce
1 1/2 cups Greek yogurt
1/2 cucumber peeled, seeded and cut into 1/2-inch cubes
1 whole lemon, juice from
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper


1. Place yogurt, cucumber, lemon juice, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in food processor and pulse until mixed but cucumbers still have some texture to them. Set aside.
2. Brush fillets with extra virgin olive oil and season aggressively with salt and pepper. Rub garlic evenly on the fillets.
3. Preheat a grill pan or other non-stick pan over medium high heat. Add fillets and cook until nicely browned on both sides (about 2-3 minutes per side).
4. Take another frying pan and heat over medium heat. Brush pitas lightly with olive oil and heat in pan one at a time until pitas are warm, slightly toasted and soft. Place on an oven-proof plate, cover with a towel and place in oven on warm while completing all 4 pitas.
5. Cut Tilapia fillets in half and place 3 halves on each pita. Top with a healthy dose of Tzatziki sauce. Layer on tomato slices and onions. Sprinkle on cilantro. Close up pita and use a toothpick to hold together.
