Preparation Time: 20 minutes
1 medium sweet onion, peeled with rood and stem removed
1 tablespoon olive oil
black pepper, freshly ground
1/2 cup mayonnaise
2 teaspoons Sriracha sauce
1 pound Atlantic Salmon fillet, cut into 4 portions
1 teaspoon olive oil
lime slices for garnish
1. Preheat oven to 350 degrees. Brush onion thoroughly with olive oil and season aggressively with sea salt and black pepper. Place in baking dish and cover with foil. Place in oven and roast for 1 1/2 to 2 hours or until deeply golden brown and soft when you squeeze it with tongs. Turn onion every 30 minutes in the oven.
2. Place onion, mayo, and sriracha sauce in a food processor with a blade and process until smooth. Season with salt to taste. Set aside.
3. Heat grill or grill pan to medium high heat. Brush salmon pieces with olive oil and season aggressively with sea salt and fresh ground pepper. Grill salmon until crispy on both sides. It should cook about 8-10 minutes for every inch of thickness.
4. Top salmon pieces with Onion and Sriracha mayo. Garnish with lime wedges.
