Fresh Herb Mayonnaise

2 1/2 ounces egg yolks
1 tablespoon fresh basil chopped
1 tablespoon fresh tarragon, chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh rosemary finely chopped
1 teaspoon fresh thyme, finely chopped
2 tablespoon water
2 tablespoon white wine vinegar
2 teaspoon dry mustard
1/2 teaspoon sugar
24 ounces vegetable oil
1/4 teaspoon white pepper
2 tablespoons lemon juice

Preparation

1. Combine the yolks, water, vinegar, mustard, fresh herbs and sugar in the bowl of a food processor. Process for 30 seconds.
2. While the machine is running, slowly drizzle in the oil.
3. Season with salt, pepper and lemon juice. Adjust to taste. Keep refrigerated.
