Cooking Tip: How to Prepare Light and Fluffy Mashed Potatoes

Cut your potatoes to uniform size. Boil them until fork tender. After draining, put them back in the pan and set them on your stove on the lowest setting possible. Let them dry for 10-15 minutes. It’s best to use a ricer or mill to mash them. Don’t over-work them!

You can pre-make your potatoes to this point the day before. When ready to finish,
heat your cream and butter together in the microwave, then stir into the potatoes. Remember: DON’T over-work them. This is key and worth repeating. Season with salt and pepper to taste. Here are a few recipes where I feature mashed potatoes. Enjoy!
