Chicken and Basil Dumplings

  • 1/4 cup butter
  • 8 pounds (two) whole chickens, cut in parts
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1 garlic clove, chopped
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 teaspoon sugar
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon basil, dried
  • 2 whole bay leaves
  • 2 cups peas (defrosted frozen)


  • 2 cups all purpose biscuit mix (like Bisquick)
  • 1 teaspoon basil, dried
  • 2/3 cup milk


  1. Heat butter in a large skillet. Add chicken pieces and brown on all sides.. Remove chicken from skillet.
  2. Add onion, celery and garlic to skillet. Cook until vegetables are tender. Sprinkle with flour and mix well. Add chicken broth, sugar, salt, pepper, basil and bay leaves. Bring to a boil, stirring constantly. Return chicken to the skillet and spoon sauce over it. Cover pan with lid. Cook in a 350 degree oven for 40 minutes.
  3. In a bowl, combine biscuit mix, basil and milk and stir with fork until fully incorporated.
  4. Remove pan chicken from oven and turn up temperature to 425 degrees. Stir peas into mixture. Using a tablespoon, drop dumplings onto the top of the chicken mixture so that they sit in the sauce. Return to oven and cook uncovered for 10 minutes. Place cover on and cook for an additional 10 minutes.
