Celebrate Cinco de Mayo with Tilapia Fish Tacos

Fish Tacos w Black Bean Salsa and Chipotle MayoMay 5th is Cinco de Mayo, the annual celebration of Mexican heritage and culture. Celebrate this special day with this recipe for Tilapia Fish Tacos with Black Bean Corn Salsa and Chipotle Sauce; it goes well with a Margarita or even a tall ice cold glass of lemonade. The chipotle sauce is extremely easy to make — mayonnaise and chipotle peppers is all you need — as is the black bean and corn salsa. As I mention in the recipe instructions, you can deep-fry the tortillas Tex-Mex style or, if you have a Mexican griddle (comal), you can lightly brown the tortillas to add a tasty texture to the layering of fish, salsa, and sauce.
