Brown Ale Onion Soup

Anytime you add beer to onion soup you have just elevated the dish to a different level of delicious.  Especially when you add a flavorful beer like a brown ale.  The roasted barley in ale adds a hoppy sweetness and beautiful red brown complexion. Onion soups are easy to make, especially if you use a good beef bouillon.  Just give the soup some love as you make it and your taste buds will be the happy benefactors!

One of the twists I put on this soup is the way I add the cheese.  When I get served a bowl of onion soup at a restaurant, it is almost embarrassing to fight through that delicious gooey cheese and present a spoon of that to my mouth.  The stringiness is just a tough fight with your spoon.  So I make fresh croutons and I sprinkle them heavily with shredded mozzarella cheese and put them on the oven.  The cheese melts all over the bread with a nice golden brown.  Then when you put that on top of the soup,  each crouton becomes a serving vessel for the cheese.
