Broccoli and Cheese Souffle

4 cups broccoli, blanched
6 whole eggs
1/2 cup cream
1 teaspoon salt
1 pinch nutmeg
1/8 teaspoon white pepper
3/4 cup Parmesan cheese, finely ground
non-stick spray

1. Place all ingredients except for the non-stick spray in a blender and blend until completely pureed.
2. Spray 4 ounce ramakins or muffin tins with not-stick spray.
3. Place them in a baking dish. Pour broccoli mixture into the ramekins about 3/4 the way up. Pour very hot water into the baking dish to create a bath but don’t get the water in the ramekins.
4. Place in a 400 degree oven until firm, or about 30 minutes.
