Bright, Refreshing, and a Great Partner for Delicious, Healthy Salmon!

What do you do with a papaya that comes home a little (or maybe a lot) unripe? Make a nice julienne by cutting it (or carefully using a mandolin) in thin strips along with some mango.  Then marinade it in some seasoned rice wine vinegar.  Season with salt and pepper and toss in some chopped cilantro.  Let this marinade for at least 30 minutes, which will soften the papaya and give it flavor.  This adds a very colorful, cool, and Caribbean fresh partner to some pan seared salmon topped with fresh herb butter!  If you are using this as part of your cholesterol reduction strategy, just drizzle with high quality extra virgin olive oil and sprinkle on the herbs instead of the butter.
